Abstract Phospholipids are used for food products, drug formulas, stabilizers, lubricants, cosmetics, pharmaceuticals, and emulsifiers. Synthetic phospholipids tend to be utilized medicinal purposes, but nowadays consumer concern has shifted from natural ingredients. have functional properties towards health, often requires containing certain fatty acids such as omega 3. The purpose of this research is process the belly fat waste jambal siam fish into purify that already obtained. results showed highest saturated acid content in oil was palmitic which expected dominate structure phosphatidylglycerol, phosphatidic acid, cardiolipin. unsaturated oleic phosphatidylinositol, phosphatidyl ethanolamine, phosphatidylcholine structure. phospholipid phosphotidylcholine, followed by diphosphatidylglycerol, phosphatidylethanolamine, phosphatidylinositol. hexane solvent produced a higher soluble fraction than insoluble fraction, especially 6 9.
